We have joined together with Wholesome World to bring you one of our favourite delicious, nutritious recipes, Peach Salad, to give your body and mind a natural boost. 

Recipe: Peach Salad

A delicious salad which is packed with nuts and seeds for healthy fats and a heated kick from the chilli flakes. Peaches, like most stone fruit, have been found to have many health enhancing properties. Peaches were found, through animal research, to contain a compound which can kill breast cancer cells and not normal cells. Peaches should ideally be eaten organic as these fruits are heavily sprayed with pesticides.

INGREDIENTS

5 Peaches (approx 150g each)
Tsp Coconut oil
150g Spinach
150g Rocket
100g Lambs Lettuce
2 tsp Pumpkin seeds
2 tsp Pine nuts
2 tsp Pistachio nuts 
2 tsp Sunflower seeds
1 Cayenne/Red pepper
2 tbsp Olive Oil
2 tsp Cider/red wine vinegar
Pinch Salt & Pepper
125g Mozzarella

EQUIPMENT

- Blender
- Grill Pan

METHOD

1. Make your dressing by skinning, and de-stoning 2 peaches & blend with:

- Tsp of cayenne pepper
- Pinch of salt
- Pinch cracked black pepper
- Pinch of chilli (Your decision!)
- Slug/tbsp of cider/red wine vinegar

2. Rinse the all salad leaves in a colander and leave to dry.

3. Chop 3 more peaches and throw them in the salad leaves.

4. Use a small bit of coconut oil to lubricate of the pan if needed, to brown & crispify the nuts, as the bacon is in it’s last minute in the pan.

5. When all ready, simply throw them in the salad.

6. Rip up the mozzarella last minute to the salad, give it all a quick tousle, dribble the dressing & serve.
